It's typically Grilled lamb, marinated and cooked over charcoal, often served with onions and a spicy sauce. And definitely try the mafe. A hearty stew made with meat (usually beef or lamb) simmered in a rich peanut butter sauce, often with vegetables like potatoes and carrots. And that fried snapper was delicious.
